Cheongyang is a modern hot hybrid; gochu is the traditional milder field pepper grown for flake.
Origin & history
The Korean field pepper dried and ground into gochugaru, the flake that colours kimchi and gochujang. Selected for bright colour and moderate heat rather than for maximum pungency.
