Origin & history
The chile of northern Syria and southern Turkey, traditionally sun-dried and coarsely ground with salt and oil into the flakes that define the region's cooking. Its cultivation was severely disrupted by the Syrian war, and much commercial Aleppo pepper is now grown in Turkey.
