Both are sold as güero; Xcatic is the Yucatecan type and this the longer central Mexican one.
Origin & history
A pale yellow Yucatecan chile, used whole in escabeche and in the Mayan-influenced cooking of the peninsula where habanero supplies the heat and xcatic the body.
